Bran muffins; brown rice flour

In a word, disappointing. I was thinking that they’d at least taste ok, but the taste makes me feel like I’m eating something from an unidentified bin at the animal feed store. I suspect it’s the combination of the bran and the brown rice flour.

The batter was also a little too stiff so I added 1/4 cup water to it at the end.

Next up I think should be barley flour. I still want to try 1/3 cup coconut flour and some other flour. Maybe I should try it with the brown rice flour; I don’t want to be stuck with the rest of the brown rice flour.

I should also note that with this test and the oat flour I did not use the potato starch; I want to let the test flour show its stuff without any help.
