Peach Greek yogurt, phase one

I’m looking forward to this one. I’ve just diced the dried peaches and diced two slices per tub. Each slice was half of a whole peach before it was dried. Next I added 1/3 cup of crystalline fructose sugar to the low fat yogurt and mixed it well and then put it in the coffee filters which were in the tubs over the peach bits.

Now they’re in the fridge dripping their whey onto the peach bits.

Since The Flavor Thesaurus lists peach and vanilla as a pairing I may try it next with the vanilla low fat yogurt. Some of the other pairings are peach & almond, peach & cherry, peach & orange, peach & clove. The last one may sound strange; it comes from pickled peaches where the peaches are studded with cloves and then put in canning jars and covered with a sweet pickling fluid.

In phase two I’ll take the plumped peach bits, drain them in a strainer, put them in the mini food processor/food chopper, add some of the yogurt, and process it until it’s smooth. Then empty all of the yogurt from the coffee filters into a bowl, add the puree, mix well, then put it back into the coffee filters to drain some more (phase three).

Store bought regular peach yogurt has always been one of my favorites so hopefully all this preparation will be worth it.
