Half a teaspoon of xanthan gum1 was way too much. Now they don’t have any crunch or snap; it’s like trying to chew an old piece of leather. I’m going to try again with a quarter teaspoon, or even an eighth.
Update: made the new batch of dough tonight and I’ll let it rest until tomorrow. I have these measuring spoons with the silly measurements of hint, pinch, smidge, and drop. The hint one looks like it’s more than an eight of a teaspoon so I used the pinch one.
